Heat oil in a skillet over medium heat. Add onion, celery, bell pepper, and corn. Cook, stirring occasionally, until softened but not browned. (10 minutes)

In an 8x8-inch casserole dish, combine the sautéed vegetable mixture, millet, quinoa, and salt. Stir to combine. (2 minutes)

Pour in the chicken stock. Cover the dish tightly with aluminum foil. (1 minute)

Bake in the preheated oven until the grains are tender and have absorbed all the liquid. (30 minutes)

For a richer flavor, toast the millet and quinoa in a dry skillet for a few minutes before adding them to the casserole dish.
Feel free to experiment with different vegetables, such as zucchini, carrots, or mushrooms.
To make this dish vegetarian, substitute vegetable broth for the chicken stock.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
