Cut a Brie-sized hole in the top of the sourdough loaf, leaving a ½-inch border around the edges and bottom. Carefully remove the bread from the center of the loaf and cut it into bite-sized pieces for dipping. (5 minutes)

Using a sharp knife, score the Brie around the edge, cutting halfway down the wheel. This will help the cheese melt evenly. (2 minutes)

Carefully slice the Brie horizontally into two equal halves using a long, thin knife or a piece of unflavored dental floss. (3 minutes)

Place the bottom half of the Brie, cut-side up, into the hollowed-out sourdough loaf. Top with half of the caramelized pear mixture and half of the toasted slivered almonds.

Place the remaining Brie half on top, cut-side up. Spread with the remaining caramelized pear mixture and sprinkle with the remaining toasted slivered almonds.

Place the filled sourdough loaf on a baking sheet lined with parchment paper.

Bake in the preheated oven until the Brie is soft and gooey, and the bread is golden brown (about 35-40 minutes).

Let cool for a few minutes before serving. Serve warm with the reserved sourdough bread pieces and assorted crackers or crostini.

For best results, use a high-quality Brie cheese. The flavor will shine through.
Toasting the slivered almonds before adding them to the Brie enhances their flavor and adds a delightful crunch.
Feel free to experiment with different types of pears, such as Bartlett or Comice.
If you don't have fresh thyme, you can substitute dried thyme. Use about 1/4 teaspoon.
For a richer flavor, add a splash of balsamic vinegar to the caramelized pears during the last few minutes of cooking.
Serve immediately for the best flavor and texture. The Brie will continue to melt as it sits.
