Drain the noodles well and cut them into shorter, more manageable pieces. Stir the noodles into the batter, ensuring they are evenly distributed.

In a skillet over medium-high heat, cook about ¼ cup of the chopped bacon until it begins to crisp. (Cook time: 2-3 minutes). Arrange the partially cooked bacon in a small circle in the center of the skillet. Pour 1 cup of the prepared batter over the bacon in the skillet. Cook the okonomiyaki until the bottom is golden brown and crispy, about 5 minutes. Flip the pancake carefully and press down gently with a spatula. Cook for another 5 minutes, or until the other side is golden brown and crispy. Repeat with the remaining bacon and batter to make additional okonomiyaki.

For a vegetarian version, omit the bacon and add other vegetables such as shredded carrots, zucchini, or bell peppers.
Okonomiyaki sauce and Japanese mayonnaise (Kewpie) are highly recommended for topping.
If you don't have soba noodles, you can substitute with udon or even spaghetti.
