Divide the cucumber slices evenly among the prepared canning jars. Add 1/2 teaspoon of pickling spice and 1/2 teaspoon of turmeric to each jar. (5 minutes)

In a large stainless steel saucepan, combine the white vinegar, water, granulated sugar, and sea salt. Bring the mixture to a boil over medium-high heat, stirring constantly until the sugar and salt are completely dissolved. Once dissolved, continue to cook at a rolling boil for 2 minutes. (10 minutes)

Carefully ladle the hot brine into each jar, leaving 1/2 inch of headspace at the top. Ensure the cucumbers are fully submerged in the brine. Discard any leftover brine. (10 minutes)

Place the lids on the jars and screw on the rings until finger-tight. Refrigerate for at least 24 hours before serving to allow the flavors to meld. Store in the refrigerator for up to 6 months. (24 hours)

For a brighter flavor, substitute cider vinegar for white vinegar.
Sterilizing the jars is important for prolonging the shelf life of your pickles.
Add a pinch of red pepper flakes to the brine for a touch of heat.
Use a mandoline for perfectly even cucumber slices.
