Follow The Directions

01

Step

Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish. (5 minutes)

02

Step

Combine rhubarb, strawberries, and 1/4 cup sugar in a bowl; transfer to the prepared baking pan. Sprinkle 1/4 cup sugar on top. (10 minutes)

03

Step

Sift flour, baking powder, baking soda, and salt together in a bowl. (5 minutes)

04

Step

Beat 2/3 cup sugar and butter in a large bowl with an electric mixer on medium speed until fluffy, 4 to 5 minutes; beat in egg and almond extract until incorporated, about 3 minutes. (8 minutes)

05

Step

Add flour mixture, alternating with sour cream, mixing until just incorporated; batter will be thick. Spoon batter evenly over rhubarb mixture. (5 minutes)

06

Step

Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 45 minutes. (45 minutes)

For a richer flavor, use brown butter instead of regular butter in the batter.
Feel free to substitute other berries like raspberries or blueberries for the strawberries.
The pudding is best served warm, perhaps with a dollop of whipped cream or a scoop of vanilla ice cream.
