For an extra layer of flavor, try using coconut milk in place of some of the evaporated milk. Adjust the amount of sugar to your liking. Condensed milk is very sweet, so taste as you go. To prevent the rice from sticking to the bottom of the pan, use a heavy-bottomed saucepan and stir frequently, especially during the last 10 minutes of cooking. If you don't have lime peel, a little lemon zest can be substituted. Leftover Arroz con Leche can be stored in the refrigerator for up to 3 days.
