Follow The Directions

01

Step
5 mins

In a small saucepan, combine the orange-flavored gelatin mix and crushed pineapple with its juice. (5 minutes)

02

Step
7 mins

Cook over low heat, stirring constantly, until the gelatin is completely dissolved. Do not boil. (5-7 minutes)

03

Step
45 mins

Remove the saucepan from the heat and stir in the sugar until it is fully dissolved. Allow the mixture to cool completely to room temperature. (30-45 minutes)

04

Step
5 mins

In a medium mixing bowl, using an electric mixer on medium speed, beat together the cooled gelatin mixture, apricot baby food, and softened cream cheese until smooth and well combined. (3-5 minutes)

05

Step
3 mins

Gently fold in the thawed whipped topping until just combined. Be careful not to overmix. (2-3 minutes)

06

Step
2 mins

Stir in the toasted chopped pecans, ensuring they are evenly distributed throughout the mixture. (1-2 minutes)

07

Step
4 hrs

Spoon the mixture into a serving bowl or individual dessert cups. Cover tightly with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the dessert to set completely. (4+ hours)

To toast the pecans, spread them in a single layer on a baking sheet and bake in a preheated oven at 350°F (175°C) for 5-7 minutes, or until fragrant and lightly golden. Allow to cool completely before chopping.
For a smoother texture, ensure the cream cheese is fully softened before beating.
If you don't have pecans, walnuts or almonds would also work well.
Feel free to adjust the amount of sugar to your liking, depending on the sweetness of the pineapple and your personal preference.

Make sure you give it enough time to chill, or it will be too runny.
