In a medium saucepan, combine the apricots, orange juice, sugar, amaretto liqueur, and vanilla extract. Stir over medium heat until the sugar is completely dissolved. (Estimated time: 5 minutes)

Bring the mixture to a boil, stirring constantly, until the apricots soften and begin to release their juices. (Estimated time: 5 minutes) Reduce the heat to low, and simmer gently for approximately 1 1/2 hours, stirring occasionally to prevent sticking. If the syrup becomes too thick or starts to burn, incorporate 1 tablespoon of water at a time, mixing well after each addition.

In a separate small bowl, dissolve the cornstarch in 1/4 cup of water. Once fully dissolved, pour the cornstarch slurry into the apricot mixture. Increase the heat to medium and bring the mixture back to a boil. Simmer until the syrup thickens to your desired consistency, approximately 30 minutes. Stir frequently to ensure even thickening.

For a smoother syrup, use an immersion blender to puree the mixture after simmering, before adding the cornstarch.
If you prefer a tarter syrup, reduce the amount of sugar to 1/3 cup.
The amaretto liqueur can be substituted with 1/2 teaspoon of almond extract if preferred.
Store the cooled syrup in an airtight container in the refrigerator for up to 2 weeks.
