Follow The Directions

01

Step

Preheat your oven to 350°F (175°C). (5 minutes)

02

Step

Prepare a muffin tin by generously greasing each cup or lining them with paper liners. (2 minutes)

03

Step

In a large bowl, whisk together the whole oats, oat flour, cinnamon, allspice, baking soda, and salt until well combined. (3 minutes)

04

Step

Add the chopped apples, yogurt, eggs, brown sugar, melted butter, and vanilla extract to the oat mixture. Stir until the batter is thoroughly mixed and everything is evenly distributed. (5 minutes)

05

Step

Gently fold in the chopped walnuts until they are just incorporated into the batter. (2 minutes)

06

Step

Carefully pour the batter into the prepared muffin cups, filling each about two-thirds full. (3 minutes)

07

Step

Bake in the preheated oven for approximately 25 minutes, or until a toothpick inserted into the center of a cup comes out clean. (25 minutes)

08

Step

Allow the breakfast cups to cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely. (10 minutes)

For a richer flavor, try using brown butter instead of melted butter. Simply melt the butter in a saucepan over medium heat, continuing to cook until the butter turns a nutty brown color and emits a fragrant aroma. Let it cool slightly before adding to the batter.
Feel free to experiment with different nuts and spices! Pecans, almonds, or a pinch of nutmeg would also be delicious additions.
These breakfast cups freeze beautifully! Once cooled, wrap them individually in plastic wrap and store them in a freezer-safe bag for up to 2 months. Reheat in the microwave or oven until warmed through.

The batter was a little thick, so I added a splash of milk. They came out perfectly moist.
