Make the Batter: To the cooled brown butter, add granulated sugar, remaining 1/2 cup brown sugar, salt, remaining 1/2 teaspoon cinnamon, and nutmeg. Whisk until well combined. Add eggs and vanilla extract, whisking until smooth. Then, whisk in sour cream and apple cider. Gradually add flour, baking powder, and baking soda, stirring until just combined and the batter is mostly smooth.

Assemble and Bake: Pour batter into the prepared baking dish, smoothing into an even layer. Evenly scatter the apple mixture (including any accumulated juices) over the top of the batter.

Bake: Bake in the preheated oven until a toothpick inserted into the center comes out mostly clean (55-65 minutes). Let the cake cool in the pan for 15-20 minutes.

Prepare the Icing: While the cake cools, whisk together powdered sugar, a pinch of salt, vanilla extract (for icing), and heavy cream until smooth and pourable. Add more heavy cream, 1 tablespoon at a time, if needed to reach desired consistency.

Ice and Serve: Pour icing over the warm cake, spreading evenly. Serve the cake warm for the best flavor and texture.

For a richer flavor, use brown butter that has been strained through a cheesecloth after browning to remove any milk solids.
Feel free to experiment with different apple varieties; a mix of sweet and tart apples works wonderfully.
If you don't have apple cider, apple juice can be substituted.
Store leftover cake in an airtight container at room temperature for up to 3 days or in the refrigerator for up to 5 days.
