Follow The Directions

01

Step

Preheat oven to 400 degrees F (200 degrees C). Grease a 12-cup muffin tin or line with paper liners. (5 minutes)

02

Step

In a large bowl, stir together the oats, whole wheat flour, kamut flour, brown sugar, baking powder, cinnamon, nutmeg, and cardamom. Add the diced apples and toss gently to coat. (5 minutes)

03

Step

In a separate bowl, whisk together the buttermilk, canola oil, eggs, and honey until well combined. (3 minutes)

04

Step

Create a well in the center of the dry oat mixture. Pour the wet buttermilk mixture into the well. Mix gently until just moistened, being careful not to overmix. Allow the batter to rest for about 5 minutes to soften the oats. (10 minutes)

05

Step

Generously fill each muffin cup with the batter. (3 minutes)

06

Step

Bake in the preheated oven for 20 to 25 minutes, or until the muffins are golden brown and spring back lightly when touched. (25 minutes)

07

Step

Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely. (5 minutes)

For an even richer flavor, try using melted butter instead of canola oil.
Add a streusel topping for added sweetness and texture. Combine 1/4 cup flour, 2 tablespoons brown sugar, 2 tablespoons cold butter, and a pinch of cinnamon. Crumble over the muffins before baking.
These muffins can be stored in an airtight container at room temperature for up to 3 days or frozen for longer storage.

I didn't have kamut flour on hand, so I substituted with more whole wheat flour. They still turned out great!
