Add the walnuts, raisins, and grated apple to the flour mixture. In a separate bowl, whisk together the lime zest, eggs, and pineapple juice. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix. (10 minutes)

Spoon the batter into the prepared loaf pan and smooth the top. (2 minutes)

Bake in the preheated oven for 1 hour and 15 minutes (75 minutes), or until a wooden skewer inserted into the center of the cake comes out clean. If the top of the cake begins to brown too quickly, tent it loosely with foil during the last 20 minutes of baking.

Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. (10 minutes)

For a richer flavor, consider browning the butter before adding it to the flour. Let it cool slightly before incorporating it into the dry ingredients.
If you don't have self-rising flour, you can make your own by combining 1 cup all-purpose flour with 1 1/2 teaspoons baking powder and 1/4 teaspoon salt.
Feel free to substitute other dried fruits for the raisins, such as dried cranberries or chopped dates.
Store the cooled cake in an airtight container at room temperature for up to 3 days.
