In a large, heavy-bottomed pot or Dutch oven, sauté the diced onion and minced garlic over medium-high heat until the onion is softened and translucent, about 5 minutes. This will create a flavorful base for the chili.

Add the ground venison to the pot and cook, breaking it up with a spoon, until it is browned, approximately 7 minutes. Drain off any excess grease.

Stir in the diced tomatoes with green chiles, black beans, kidney beans, pinto beans, tomato sauce, beef broth, cumin, oregano, paprika, chili powder, sugar, black pepper, and red pepper flakes. Ensure all ingredients are well combined.

Bring the chili to a boil, then reduce the heat to low, cover, and simmer for at least 30 minutes, or up to 1 hour, stirring occasionally. The longer it simmers, the more the flavors will meld and deepen.

For a richer flavor, consider browning the venison in batches to avoid overcrowding the pot.
Adjust the amount of red pepper flakes to your desired level of spiciness.
Serve with your favorite chili toppings, such as shredded cheese, sour cream, chopped onions, or a dollop of guacamole.
