Follow The Directions

01

Step
5 mins

Preheat the oven to 350 degrees F (175 degrees C). Lightly grease an 8x4-inch loaf pan with cooking spray. (5 minutes)

02

Step
5 mins

In a large bowl, combine the ground venison, pork sausage, and finely chopped onion until well mixed. (5 minutes)

03

Step
5 mins

Briefly run the onion buns under water, then squeeze out the excess moisture. Break the buns into small pieces and add them to the meat mixture, ensuring they are evenly distributed. (5 minutes)

04

Step
5 mins

Incorporate the eggs, brandy, bacon grease, Worcestershire sauce, thyme, red pepper flakes, seasoned salt, garlic and herb seasoning, black pepper, and ground sage into the meat mixture. Mix thoroughly until all ingredients are well combined. (5 minutes)

05

Step
2 mins

Transfer the meatloaf mixture to the prepared loaf pan, pressing gently to ensure an even surface. (2 minutes)

06

Step
1 hrs 5 mins

Bake in the preheated oven for 60 to 70 minutes, or until the meatloaf is browned and the juices run clear. An instant-read thermometer inserted into the center should register at least 160 degrees F (70 degrees C). (70 minutes)

07

Step
10 mins

Remove from oven and let rest for 10 minutes before slicing and serving. (10 minutes)

For a richer flavor, consider browning the ground venison and sausage in a skillet before combining with the other ingredients.
If you don't have bacon grease on hand, butter or olive oil can be substituted.
Feel free to adjust the amount of red pepper flakes to suit your spice preference.
This meatloaf is also excellent when formed into patties and grilled outdoors. Grill over medium heat until cooked through, about 5-7 minutes per side.

I made this with ground beef instead of venison, and it was still amazing. A great base recipe!
