Prepare Breading Station (5 mins): Set up a breading station with three shallow dishes. In the first dish, place the flour. In the second dish, add the lightly beaten eggs. In the third dish, spread the panko bread crumbs evenly.

Bread the Eggs (10 mins): One at a time, gently roll each sausage-wrapped egg in the flour, ensuring it is lightly coated. Then, dip the floured egg into the beaten egg, allowing any excess to drip off. Finally, roll the egg in the panko bread crumbs, pressing gently to ensure they adhere evenly. Place the breaded eggs on a plate.

Air Fry the Scotch Eggs (12 mins): Preheat your air fryer to 390°F (200°C). Spray the air fryer basket with cooking spray to prevent sticking. Arrange the breaded eggs in the basket in a single layer, being careful not to overcrowd. You may need to cook them in batches. Air fry for 12 minutes, flipping the eggs halfway through, until they are golden brown and the sausage is cooked through. (6 minutes per side)

Serve (2 mins): Carefully remove the air-fried Scotch Eggs from the basket. Serve immediately with the chilled mango chutney dipping sauce. Garnish with a sprinkle of fresh herbs, if desired.

For a richer flavor, use a high-quality sausage with herbs and spices.
Ensure the hard-boiled eggs are completely cooled before wrapping them in sausage to prevent the sausage from cooking unevenly.
If you don't have panko bread crumbs, regular bread crumbs can be used, but the texture will be slightly different.
Adjust the cooking time based on your air fryer model. The sausage should reach an internal temperature of 160°F (71°C).
Scotch Eggs are best served immediately while they are still warm and crispy.
