In a large resealable plastic bag, combine the chili sauce, soy sauce, Sriracha, lime zest, lime juice, granulated garlic, minced ginger, peanut butter, and salt. Mix well until thoroughly blended. (5 minutes)

Add the chicken thighs to the bag, squeeze out excess air, and ensure each piece is fully coated in the marinade. Marinate in the refrigerator for at least 30 minutes, or up to 24 hours for enhanced flavor. (30 minutes - 24 hours)

Preheat your air fryer to 350 degrees F (180 degrees C) according to the manufacturer's instructions. (5 minutes)

Lightly spray the air fryer basket with cooking spray to prevent sticking. (1 minute)

Remove the chicken from the marinade, allowing any excess to drip back into the bag. Arrange the chicken pieces in the air fryer basket in a single layer. Air fry for 20 to 22 minutes, flipping halfway through, until an instant-read thermometer inserted into the thickest part registers 165 degrees F (74 degrees C). (20-22 minutes)

While the chicken is air frying, prepare a quick sauce: In a microwave-safe container, combine the leftover marinade with about 1/2 cup of water. Microwave on high until the mixture comes to a boil, then continue cooking for about 1 minute, watching carefully to prevent it from boiling over. (5 minutes)

Serve the air-fried peanut chicken over hot cooked rice, drizzled with the warm peanut sauce. Garnish with chopped cilantro, sliced scallions, julienne cucumbers and carrots, and chopped peanuts, if desired. Enjoy! (5 minutes)

For best results, marinate the chicken for at least 2 hours to allow the flavors to fully penetrate.
Adjust the amount of Sriracha to your preferred spice level.
If you don't have an air fryer, you can bake the chicken in a preheated oven at 375 degrees F (190 degrees C) for 25-30 minutes, or until cooked through.
The peanut sauce can also be prepared on the stovetop over medium heat, stirring constantly until thickened.
If the peanut sauce becomes too thick, add a tablespoon of water at a time until you reach the desired consistency.
Serve with a side of steamed broccoli or other vegetables for a complete and balanced meal.
