In a large bowl, gently combine the ground turkey, minced onion, panko bread crumbs, 1/4 cup Buffalo wing sauce, chopped fresh parsley, egg, minced garlic, salt, celery seed, black pepper, cayenne pepper, and paprika. Be careful not to overmix, as this can lead to tough burgers. (10 minutes)

Divide the mixture into 12 equal portions and form into patties. Ensure the patties are uniform in thickness for even cooking. (5 minutes)

Cook patties on the preheated grill for 3 minutes, then flip. Continue cooking until cooked through, about 2 minutes more, or until an instant-read thermometer inserted into the center registers at least 165 degrees F (74 degrees C). (5 minutes)

Place each cooked burger inside a bun and top with a slice of Monterey Jack cheese. Allow the cheese to melt slightly from the residual heat. (2 minutes)

In a separate bowl, combine the ranch dressing and the remaining 6 tablespoons of Buffalo wing sauce. Adjust the amount of Buffalo sauce to your desired level of spiciness. (2 minutes)

For extra flavor, try marinating the ground turkey mixture for 30 minutes before forming the patties.
If you don't have panko bread crumbs, regular bread crumbs can be used as a substitute. However, panko provides a lighter, crispier texture.
Adjust the amount of cayenne pepper and Buffalo wing sauce to your personal spice preference.
