Dutch-processed cocoa powder will provide a richer, smoother chocolate flavor, but regular unsweetened cocoa powder will also work. Adjust the amount of espresso powder to your preference. If you're not a fan of coffee, you can omit it entirely. If you don't have a high-powered blender, you can use a regular blender or food processor, but the mousse may not be quite as smooth and airy.
