Step

**Prepare the Cherry Soak (5 minutes):** In a small bowl, combine the drained cherry juice and rum extract. Set aside.

**Prepare the Puddings (10 minutes):** In separate bowls, prepare the vanilla and chocolate puddings according to package directions. Let them set for about 5 minutes to thicken slightly.

**Layer the Dessert (20 minutes):** In a 9x13 inch baking dish, arrange a layer of ladyfingers on the bottom, cutting some to fit snugly if necessary. Drizzle 1/3 of the cherry juice mixture evenly over the ladyfingers. Spoon the vanilla pudding over the ladyfingers, spreading it to the edges of the dish. Repeat the layering process: ladyfingers, 1/3 cherry juice, chocolate pudding. Finish with a final layer of ladyfingers and the remaining cherry juice.

**Whip the Cream (10 minutes):** In a medium bowl, whip the heavy cream and sugar together until soft peaks form.

**Assemble and Chill (2 hours minimum):** Spread the whipped cream evenly over the top layer of ladyfingers. Sprinkle with toasted almonds and garnish with whole maraschino cherries. Cover the dish and refrigerate for at least 2 hours, or preferably longer, to allow the flavors to meld and the ladyfingers to soften.

For a richer flavor, use dark rum extract instead of light.
If you can't find ladyfingers, substitute with sponge cake, cut into similar shapes.
Feel free to experiment with other extracts, such as almond or vanilla, in the pudding layers.
This dessert is best made a day ahead to allow the flavors to fully develop.
