Follow The Directions

01

Step

In a large bowl, whisk together the red wine vinegar, red wine, crushed garlic, black pepper, salt, whole cloves, bay leaves, and dried thyme. (5 minutes)

02

Step

Transfer the marinade to a resealable plastic bag. Add the pork cubes, ensuring they are fully submerged in the marinade. Remove excess air, seal the bag tightly, and gently massage the pork to ensure even coating. (5 minutes)

03

Step

Refrigerate the marinating pork for at least 2 days, or ideally 4 days, turning the bag occasionally to allow the flavors to penetrate deeply. (Marinate for 48-96 hours)

04

Step

Preheat your oven to 350 degrees F (175 degrees C).

05

Step

Remove the pork from the marinade, shaking off any excess. Reserve 1/2 cup of the marinade; discard the remaining marinade. (5 minutes)

06

Step

Place the marinated pork and the reserved 1/2 cup of marinade in a baking dish, ensuring the pork is spread in a single layer. (2 minutes)

07

Step

Bake in the preheated oven until the pork is heated through, approximately 20 minutes. Remove from the oven and drain as much liquid as possible from the baking dish. (20 minutes)

08

Step

Heat vegetable oil in a large skillet over medium-low heat. Add the pork to the skillet in batches, being careful not to overcrowd the pan. (5 minutes)

09

Step

Cook and stir the pork until it is completely browned and no longer pink in the centers, about 10 to 15 minutes per batch. Repeat with the remaining pork. (10-15 minutes)

For an extra layer of flavor, consider adding a pinch of smoked paprika to the marinade.
Serve this delightful Wine and Garlic Pork with traditional Portuguese linguiça, a hearty pot of bacon-laced baked beans, and a slice of sweet Portuguese bread. Hawaiian sweet bread makes a wonderful substitute.
Feel free to experiment with different types of wine in the marinade. A dry white wine, such as Vinho Verde, can also be used for a lighter flavor profile.
