For a non-alcoholic version, simply omit any spirits. For a boozier version, stir in 1 cup of brandy, dark rum, or bourbon during the last 30 minutes of simmering. Adjust the spices to your liking. If you prefer a stronger clove flavor, add a few more cloves. If you want a bit more zing, increase the ginger. For a prettier presentation, stud an orange with cloves and float it in the punch while it simmers. Leftover Wassail Punch can be stored in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave.
