Combine one can of chickpeas (with its liquid) and the drained second can of chickpeas in a Vitamix or other high-powered blender. Reserve the liquid from the drained can. (2 minutes)

Heat 1 tablespoon of olive oil in a small saucepan over medium-high heat. Add the minced garlic and sauté until lightly golden, about 1 minute. Immediately remove from heat and add the garlic (with the oil from the pan) to the blender. (3 minutes)

Squeeze the juice from the lemon directly into the blender, being careful to avoid any seeds. Add the remaining 5 tablespoons of olive oil, tahini, salt, and cumin. (2 minutes)

Blend on high speed for 1-2 minutes until the mixture is well combined. Gradually add the reserved chickpea liquid, blending continuously, until you reach your desired consistency. This may take an additional 2-3 minutes.

For the smoothest hummus, ensure your tahini is well-stirred before measuring.
Adjust the amount of garlic to your preference. Start with less and add more to taste.
Don't be afraid to experiment with spices! A pinch of smoked paprika or cayenne pepper can add a delightful twist.
Serve with warm pita bread, fresh vegetables, or as a dip with your favorite snacks.
