Heat 1 teaspoon vegetable oil in a skillet over medium heat. Add onion, bell pepper, and garlic; cook and stir until just tender. Transfer mixture to a large bowl. (10 minutes)

Stir baking mix, zucchini, yellow squash, carrot, ½ cup Cheddar cheese, eggs, green onion, ¼ cup vegetable oil, salt, Italian seasoning, paprika, red pepper flakes, and black pepper into onion mixture; spread into the prepared baking dish. Sprinkle with remaining ½ cup Cheddar cheese. (10 minutes)

Bake in the preheated oven until lightly browned. (35 minutes)

For a richer flavor, try using a blend of cheeses such as Gruyere or Monterey Jack along with the Cheddar.
Feel free to experiment with different vegetables based on what's in season or your personal preferences. Spinach, mushrooms, or asparagus would be excellent additions.
If you don't have buttermilk baking mix, you can substitute it with a combination of all-purpose flour and baking powder. Adjust the salt accordingly.
