Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Cook the banana slices until caramelized and slightly crispy on the outside, about 3-4 minutes per side. Remove from the skillet and set aside. (8 minutes)

Pour the black beans into a blender or food processor and blend until smooth and creamy, forming a thick sauce. Set aside. (3 minutes)

In a small bowl, combine the diced mango, red onion, jalapeño pepper (if using), and a pinch of salt. Mix well to create a vibrant salsa. Set aside. (5 minutes)

To assemble the arepas, place a slice of polenta on each of 4 plates. Top each with a generous spoonful of the black bean sauce, followed by a slice of crispy tofu, a few caramelized banana slices, some avocado, and a heaping spoonful of the mango salsa. Serve immediately and enjoy! (5 minutes)

For a smokier flavor, grill the polenta and tofu slices instead of broiling.
Adjust the amount of jalapeño in the salsa to your preferred level of spiciness.
Feel free to add other toppings such as shredded lettuce, chopped cilantro, or a squeeze of lime juice.
Ensure tofu is pressed well to remove excess water before cooking for a crispier texture.
