Uncover the pan, increase the heat to medium-high, and cook until the sauce has thickened and reduced to a glossy glaze, about 5 minutes.

Remove from heat and stir in half of the minced fresh parsley. (1 minute)

For an extra layer of flavor, consider adding a pinch of ground cinnamon or ginger to the carrots while they simmer.
If you prefer a less sweet dish, reduce the amount of honey and brown sugar to taste.
Tzimmes can be made ahead of time and reheated. The flavors often meld and deepen overnight.
