Follow The Directions

01

Step
0 mins

Preheat oven to 425 degrees F (220 degrees C). Lightly butter a 9x13-inch baking dish with 1 tablespoon of the butter. (2 minutes)

02

Step
3 mins

Melt the remaining 6 tablespoons of butter in a medium saucepan over medium heat. Whisk in the flour and cook, stirring constantly, until the raw flour taste is gone, about 2-3 minutes. (5 minutes)

03

Step
8 mins

Gradually whisk in the milk, ensuring there are no lumps. Increase the heat to medium-high and cook, stirring continuously, until the sauce thickens and comes to a gentle simmer, about 5-10 minutes. Stir in the grated truffled Pecorino cheese, salt, cayenne pepper, and nutmeg. Continue to stir until the cheese is melted and the sauce is smooth and thickened. (15 minutes)

04

Step
6 mins

Bring a large pot of salted water to a boil. Add the cauliflower florets and cook until they are slightly tender, about 6 minutes. Drain well. (8 minutes)

05

Step
0 mins

Transfer the drained cauliflower to the prepared baking dish and spread evenly. Pour the cheese sauce evenly over the cauliflower. Sprinkle the bread crumbs and grated Parmigiano-Reggiano cheese over the top. Drizzle with olive oil and add a pinch of cayenne pepper. (5 minutes)

06

Step
30 mins

Bake in the preheated oven until the gratin is golden brown and bubbly, about 30 minutes. (30 minutes)

07

Step

Remove from the oven and let rest for a few minutes before garnishing with fresh chives and serving. (5 minutes)

For an even richer flavor, try using heavy cream instead of milk.
If you can't find truffled Pecorino, you can use regular Pecorino and add a few drops of white truffle oil to the cheese sauce.
Feel free to add other vegetables to the gratin, such as broccoli or Brussels sprouts.
The gratin can be assembled ahead of time and baked just before serving.

The truffle flavor was a bit overpowering for me. Next time, I'll use less truffled cheese.
