In a large bowl, combine the shredded green cabbage, red cabbage, carrots, and chopped cilantro. (5 minutes)

In a separate bowl, whisk together the lime juice and peanut oil until emulsified. Add the sugar and continue whisking until fully dissolved. (3 minutes)

Pour the lime dressing over the slaw mixture and toss gently to coat all the vegetables evenly. Season with kosher salt and freshly ground black pepper to taste. (2 minutes)

Cover the bowl tightly with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld. For optimal flavor, chill for 1-2 hours. (30+ minutes)

For a creamier slaw, add 2-3 tablespoons of mayonnaise or Greek yogurt to the dressing.
If you don't have peanut oil, vegetable oil or canola oil can be substituted.
Add a pinch of red pepper flakes to the dressing for a touch of heat.
Slaw can be stored in an airtight container in the refrigerator for up to 3 days.
