For a smoky flavor, roast the tomatillos and chile pepper under the broiler for a few minutes before simmering. If you don't have fresh oregano, 1 teaspoon of dried oregano can be substituted. Adjust the amount of serrano pepper to your preferred heat level. Remember that the heat will intensify as it simmers. For a smoother salsa, peel the tomatillos after they have been simmered, before blending.
