Follow The Directions

01

Step

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper. (Prep time: 5 minutes)

02

Step

In a small bowl, dissolve the yeast in warm water. Let it stand for 5 minutes to activate. (Prep time: 5 minutes)

03

Step

Place the shredded mozzarella cheese in a microwave-safe bowl. Microwave for 90 seconds, pausing to stir every 30 seconds, until completely melted. Stir in the yeast mixture and beaten egg until combined. The mixture may appear separated at this point, which is normal. (Prep time: 3 minutes)

04

Step

Add the almond flour, xanthan gum, and salt to the cheese mixture. If the dough is difficult to mix, microwave for an additional 20-30 seconds to soften the cheese. Stir until all ingredients are thoroughly incorporated. Then, using your hands, knead the dough for 2 minutes until a smooth ball forms. (Prep time: 5 minutes)

05

Step

Place the dough onto the prepared baking sheet. Using your fingers, press the dough evenly into a thin circle, approximately 11-12 inches in diameter. Aim for a uniform thickness for even baking. (Prep time: 5 minutes)

06

Step

Bake in the preheated oven for about 10 minutes, or until the crust is lightly golden brown. Remove from the oven, add your desired pizza toppings, and return to the oven for another 5 minutes, or until the cheese is melted and bubbly. (Bake time: 15 minutes)

For the best flavor, use freshly shredded mozzarella cheese from a block rather than pre-shredded varieties, as they often contain cellulose that inhibits melting.
While the yeast doesn't contribute to rising (due to the lack of sugar), it adds a subtle, traditional bread-like flavor to the crust.
Feel free to experiment with different herbs and spices in the dough, such as garlic powder, Italian seasoning, or dried oregano, to customize the flavor profile.
If the dough is too sticky to handle, lightly dust your hands with almond flour.
