Divide the mixture into 4 equal portions. Form each portion into a thin patty. Sprinkle shredded Colby-Jack cheese evenly onto 2 of the patties, leaving a 3/4-inch border. Top with the remaining patties, pressing the edges firmly to seal and create 2 cheese-stuffed burgers. (5 minutes)

Place the stuffed patties in the freezer to chill slightly, about 10 minutes. This helps them hold their shape on the grill.

Preheat an outdoor grill to high heat.

Spray the grill grate with cooking spray. Reduce heat to low. Place burgers onto the grill, cover, and cook for about 10 minutes per side, or until the outsides are lightly charred and the cheese is melted. Maintain a grill temperature of approximately 300°F (150°C). Use a spray bottle of water to control flare-ups. (20 minutes)

The amount of red pepper flakes can be adjusted to your preference. For a milder burger, reduce or omit them entirely.
