For a more intense peppermint flavor, add an extra 1/4 teaspoon of peppermint extract. To prevent the cookies from spreading too thin, chill the dough for 30 minutes before baking. For chewier cookies, slightly underbake them. Store cooled cookies in an airtight container at room temperature for up to 5 days.
