In a separate small bowl, dissolve the baking powder in 1 tablespoon of water. Once dissolved, add this mixture to the pork mixture and blend completely. The baking powder will give the pork its signature bouncy texture. (2 minutes)

Cover the bowl with plastic wrap and chill in the refrigerator for at least 1 hour to allow the flavors to meld and the pork to firm up. (1 hour)

Preheat an outdoor grill to medium heat and lightly oil the grate to prevent sticking. (5 minutes)

Using lightly oiled hands, thread a handful of the pork mixture onto a soaked wooden skewer. Shape the meat into a 1-inch-thick sausage around the skewer. Repeat with the remaining pork mixture and skewers. (20 minutes)

Grill the skewers, turning as needed, until they are browned on all sides and no longer pink in the center. This should take approximately 15 minutes. (15 minutes)

Once cooked, remove the skewers from the grill and let them rest for a few minutes before cutting each sausage into bite-sized pieces. Serve hot and enjoy!

For best results, soak the wooden skewers in water for at least 30 minutes before grilling to prevent them from burning.
If you don't have an outdoor grill, you can broil the skewers in the oven. Place them on a baking sheet lined with foil and broil for about 10-12 minutes, turning halfway through, until cooked through.
Experiment with different dipping sauces! Nuoc cham is a classic choice, but peanut sauce or a spicy chili sauce would also be delicious.
Fresh Thai herbs such as mint, cilantro, and Thai basil add a wonderful aroma and flavor to this dish. Don't be shy about adding a generous amount!
