For a richer flavor, lightly toast the dried red chile peppers in a dry pan over medium heat for a few minutes before blending. Adjust the number of chile peppers to control the spiciness of the paste. For a milder curry, remove the seeds from the peppers before using. Fresh lemongrass and galangal (Thai ginger) can be used in place of lemongrass powder for a more authentic flavor. Shrimp paste (also known as belacan or kapi) adds a unique umami depth to the curry. If you are vegetarian or vegan, you can omit it, but the flavor profile will be slightly different.
