Follow The Directions

01

Step

Poach the Shrimp: In a medium saucepan, bring lightly salted water to a gentle boil. Add the shrimp and cook for 2-3 minutes, until pink and opaque. Drain, cool slightly, and pat dry. Slice each shrimp in half lengthwise. (Total time: ~5 minutes)

02

Step

Prepare the Pork: In a separate saucepan, bring lightly salted water to a boil. Add the pork loin and cook for approximately 10 minutes, or until an internal temperature of 145°F (63°C) is reached. Let cool, then thinly slice against the grain. (Total time: ~20 minutes)

03

Step

Cook the Noodles: Bring another pot of water to a boil. Cook rice noodles according to package directions, usually 7-8 minutes, until tender. Drain and rinse under cold water to prevent sticking. (Total time: ~10 minutes)

04

Step

Assemble the Rolls: Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 30 seconds, until softened and pliable. Lay the wrapper flat on a clean surface. Place 2-3 basil leaves in the center, followed by 4-5 shrimp halves, a small portion of sliced pork, and a small amount of rice noodles. Sprinkle with cilantro, mint, and bean sprouts. Fold the sides of the wrapper inward, then tightly roll from the bottom up, like a burrito. Repeat with remaining wrappers and filling. (Total time: ~30 minutes)

05

Step

Prepare the Dipping Sauce: In a small saucepan, combine hoisin sauce, peanut butter, and water. Heat over medium heat, stirring until smooth and warmed through. Do not boil. (Total time: ~5 minutes)

06

Step

Serve: Garnish the hoisin-peanut sauce with chopped roasted peanuts, if desired. Serve immediately with the Thai Basil Rolls for dipping. (Total time: ~2 minutes)

For best results, use fresh, high-quality ingredients. The freshness of the herbs is key to the overall flavor of the rolls.
To prevent the rice paper wrappers from sticking, work quickly and keep your work surface clean and slightly damp.
The rolls can be assembled a few hours ahead of time. Wrap them tightly in plastic wrap to prevent them from drying out. Keep refrigerated until ready to serve.
Adjust the amount of peanut butter in the sauce to your liking. For a spicier sauce, add a pinch of red pepper flakes or a dash of sriracha.
