Follow The Directions

01

Step

In a medium saucepan, combine the tomatillos, onion, garlic, and jalapenos. Add water to cover. (2 minutes)

02

Step

Bring the mixture to a boil over medium heat, then reduce heat and simmer until the tomatillos soften and change color from bright green to a yellow-green, about 5-8 minutes. (8 minutes)

03

Step

Using a slotted spoon, carefully transfer the cooked vegetables to a blender. Be sure not to fill the blender more than halfway. (2 minutes)

04

Step

Secure the lid tightly, holding it down with a folded kitchen towel for safety. Start the blender with a few quick pulses, then puree until smooth, about 1 minute. (2 minutes)

05

Step

Add salt, cilantro, and lime juice to the blender. Pulse briefly to combine. (1 minute)

06

Step

Scoop the flesh of the avocados into the blender. Blend until smooth and creamy. (2 minutes)

07

Step

Taste and adjust seasoning as needed, adding more salt, cilantro, or lime juice to your preference before serving. (2 minutes)

For a smoother guacamole, ensure the tomatillos are very soft after simmering. If using a regular blender instead of a high-speed blender, you may need to blend for a longer time to achieve a smooth consistency.
The heat level can be easily adjusted by controlling the number of jalapeno seeds used. Removing all seeds will result in a milder guacamole, while leaving them in will provide more kick.
Serve immediately with tortilla chips, or as a topping for tacos, grilled meats, or eggs. Guacamole is best enjoyed fresh, but can be stored in an airtight container in the refrigerator for up to 24 hours. Press plastic wrap directly onto the surface of the guacamole to prevent browning.
