Gently stir in the crème fraîche, followed by the fresh tarragon and Dijon mustard. Reduce the heat to low and simmer, stirring continuously, until the sauce thickens to your desired consistency. (2-3 minutes)

For an extra layer of flavor, consider adding a splash of lemon juice or a pinch of red pepper flakes to the sauce.
If you don't have fresh tarragon, you can substitute 1 teaspoon of dried tarragon, but fresh is highly recommended for the best flavor.
This sauce is also delicious with other fish, chicken, or even roasted vegetables.
Crème fraîche adds a richer flavor than half-and-half, but the latter can be used for a lighter sauce.
