In a large skillet, heat over medium-high heat. Add ground turkey and cook, breaking it apart with a spoon, until browned and cooked through (5-7 minutes). Drain off any excess grease.

Stir in chopped green chilies and taco seasoning mix. Reduce heat to medium-low. Add cream cheese in dollops, stirring until melted and well combined. Stir in salsa and green onions. Season with salt to taste. Simmer until the mixture is heated through and slightly bubbly (2 minutes). Stir in Monterey Jack cheese until melted and gooey (3 minutes). Remove from heat and set aside.

Position an oven rack about 6 inches from the broiler and preheat the broiler. Line a baking sheet with aluminum foil for easy cleanup.

Place poblano peppers on the prepared baking sheet. Broil until the skins are blackened and blistered, turning occasionally for even charring (5-8 minutes).

Transfer the broiled peppers to a zip-top bag and seal. Let them steam and cool in the bag, which will help loosen the skins (15 minutes). Once cool enough to handle, gently peel off and discard the blackened skins, being careful not to tear the peppers. Make a lengthwise slit down one side of each pepper and carefully remove the seeds and membranes.

Preheat oven to 350 degrees F (175 degrees C).

Spoon the turkey and cheese mixture generously into each poblano pepper. Arrange the stuffed peppers in a baking dish.

Bake in the preheated oven until the peppers are heated through and the filling is bubbly (20 minutes).

Let the stuffed poblanos cool slightly before serving. Garnish with extra green onions, salsa, or a dollop of sour cream, if desired.

For a spicier kick, add a pinch of red pepper flakes to the turkey mixture.
If you don't have Monterey Jack cheese, cheddar or pepper jack can be substituted.
Roasting the peppers in the oven is an alternative to broiling. Roast at 400 degrees F (200 degrees C) until the skins are blistered.
Prepare the filling in advance and store it in the refrigerator until ready to stuff the peppers.
For vegetarian, substitute the ground turkey with black beans or quinoa.
