Follow The Directions

01

Step

Preheat the oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving an overhang on all sides for easy removal. (5 minutes)

02

Step

In a large bowl, cream together the softened butter and 1/3 cup sugar until light and fluffy using an electric mixer. Beat in the egg and vanilla extract until well combined. Gradually add the flour, salt, and baking soda, mixing until just combined. Be careful not to overmix. (10 minutes)

03

Step

With floured hands, press the dough evenly into the prepared baking pan. (5 minutes)

04

Step

Bake in the preheated oven for 12-16 minutes, or until the edges of the crust are lightly golden brown. Remove from the oven and let cool for 10 minutes. (16 minutes)

05

Step

While the crust is cooling, prepare the strawberry filling. In a large bowl, gently toss the sliced strawberries with the remaining 1/4 cup sugar, cornstarch, and lemon juice until well coated. (5 minutes)

06

Step

Pour the strawberry mixture evenly over the partially baked shortbread crust. Return the pan to the oven and bake for an additional 20-25 minutes, or until the strawberries are softened and the filling has thickened slightly. (25 minutes)

07

Step

Remove from the oven and let the bars cool completely in the pan at room temperature. (60 minutes)

08

Step

In a small, microwave-safe bowl, heat the strawberry jam for 15 seconds, or until slightly runny. Brush the melted jam evenly over the top of the strawberry filling. (2 minutes)

09

Step

Allow the bars to cool completely in the pan before lifting them out using the parchment paper overhang. Cut into 9 equal-sized bars and store in the refrigerator. (10 minutes)

For a richer flavor, use brown butter in the shortbread crust. Simply melt the butter in a saucepan over medium heat, swirling occasionally, until it turns a nutty brown color. Let it cool slightly before using.
A touch of almond extract (about 1/4 teaspoon) added to the shortbread dough can enhance the overall flavor profile.
If you don't have strawberry jam on hand, you can use any other berry jam or even a simple glaze made from powdered sugar and milk.
These bars are best served chilled, as the filling sets up nicely in the refrigerator.
