Prepare the Rice: Rinse the sweet rice under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming too sticky. Soak the rinsed rice in warm water for at least 2 hours, or preferably overnight (2-8 hours). Drain the soaked rice thoroughly.

Steam the Rice: Set up a steamer by placing a steamer insert into a saucepan. Fill the saucepan with water, ensuring it remains just below the bottom of the steamer insert. Bring the water to a rolling boil. Line the steamer basket with a piece of cheesecloth or parchment paper, leaving some overhang. Gently spoon the drained rice into the lined steamer. Steam the rice over medium heat until it is tender and translucent, approximately 20-25 minutes. Check for doneness by tasting a few grains; they should be soft and slightly chewy. Once cooked, transfer the steamed rice to a serving bowl.

Infuse with Coconut Milk: In a separate saucepan, combine the coconut milk, sugar, and salt. Heat the mixture over medium-low heat, stirring constantly, until the sugar and salt are completely dissolved. Do not boil. Simmer for about 2-3 minutes. Pour approximately three-quarters of the warm coconut milk mixture over the cooked rice in the serving bowl. Cover the bowl tightly and let the rice soak for at least 5 minutes, allowing it to absorb the coconut milk and become wonderfully creamy.

Assemble and Serve: Gently fluff the rice with a fork to distribute the coconut milk evenly. Pour the remaining coconut milk mixture over the rice. Arrange the sliced mango attractively on top of the coconut rice. Serve immediately, or chill for a refreshing treat.

For an extra layer of flavor, toast a handful of sesame seeds in a dry pan over medium heat until golden and fragrant. Sprinkle the toasted sesame seeds over the finished dish before serving.
Adjust the sweetness of the coconut milk mixture to your preference. Taste and add more sugar if desired.
If you don't have a steamer, you can cook the rice in a rice cooker using the sweet rice setting, or by simmering it in a pot with water until cooked through.
Coconut milk quality varies. Use a good quality, full-fat coconut milk for the best flavor and texture.
