Preheat the oven to 350 degrees F (175 degrees C). Line a 12-cup muffin tin with foil liners. Spray liners with cooking spray. (5 minutes)

Place oats into a bowl and add milk. Let stand for 10 minutes to soften the oats. (10 minutes)

In a separate bowl, whisk together the sifted wheat flour, sugar, baking powder, and salt. Set aside. (5 minutes)

In a large mixing bowl, whisk together the egg, vegetable oil, and pureed prunes until well combined. Add the oat mixture and stir until just combined. Gently fold in the flour mixture until just blended, being careful not to overmix. (5 minutes)

Spoon the batter into the prepared muffin cups, filling each about 2/3 full. (5 minutes)

Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, approximately 20 to 25 minutes. (20-25 minutes)

For a richer flavor, consider using brown sugar instead of white sugar.
If you don't have pureed prunes, applesauce or mashed banana can be used as a substitute.
Allow muffins to cool slightly in the muffin tin before transferring them to a wire rack to cool completely.
