Chop the cooked sausage and add to the mixture along with the squash. Season with oregano, salt, and pepper. Reduce heat to medium-low; simmer, stirring occasionally, for 10 minutes. Transfer to the baking dish.

Arrange apple slices over the mixture. Drizzle 1 teaspoon olive oil over apples. Scatter almonds and sprinkle with Monterey Jack cheese.
