Follow The Directions

01

Step

Sauté the Aromatics: Heat the vegetable oil in a skillet over medium heat. Add the minced garlic and cook until fragrant, about 1-2 minutes. Be careful not to burn the garlic.

02

Step

Prepare the Spinach Filling: Add the thawed and drained spinach to the skillet. Cook, stirring occasionally, until the spinach is heated through and any excess moisture has evaporated, about 3-5 minutes. Season with salt to taste. Transfer the spinach mixture to a bowl and let it cool slightly.

03

Step

Combine the Filling: Once the spinach has cooled slightly, gently mix in the crumbled feta cheese until well combined. Set aside.

04

Step

Preheat and Prep: Preheat your oven to 400 degrees F (200 degrees C). Lightly grease two baking sheets or line them with parchment paper.

05

Step

Assemble the Rolls: On a lightly floured surface, unfold one sheet of thawed puff pastry. Cut it in half lengthwise. Roll one half with a rolling pin to slightly lengthen it and make it easier to fold. In a small bowl, whisk together the beaten egg and milk to create an egg wash.

06

Step

Fill and Roll: Spread approximately one-sixth of the spinach mixture evenly down the center of the puff pastry strip. Fold one side of the pastry over the filling, then brush the other side with the egg wash. Fold the egg-washed side over to seal the roll.

07

Step

Garnish and Slice: Brush the top of the roll generously with the remaining egg wash, then sprinkle evenly with sesame seeds. Using a sharp knife, cut the roll into 6 equal-sized mini rolls.

08

Step

Bake to Perfection: Place the cut rolls onto the prepared baking sheets, leaving some space between each. Bake in the preheated oven for 20-25 minutes, or until the rolls are puffed up and beautifully golden brown.

For a richer flavor, consider adding a pinch of nutmeg or a dash of red pepper flakes to the spinach filling.
Ensure the spinach is thoroughly drained to prevent soggy rolls.
For a vegetarian option, use a plant-based milk alternative.
If you want to make ahead, unbaked spinach rolls can be stored in the refrigerator for up to 24 hours.

I found that chilling the assembled rolls in the fridge for 15 minutes before baking helped them puff up even more.

I used fresh spinach and it worked perfectly. Just make sure to wilt it down first.

These are great, but a bit time-consuming for a weeknight. I prepped the filling ahead of time to save time.
