Sauté the Vegetables: Reduce the heat to medium-high. Add the remaining tablespoon of olive oil to the same wok or pan. Add the matchstick carrots and stir-fry until they are just softened but still retain a delightful crunch. (3 minutes). Stir in the sliced red bell pepper and cook until softened. (1 minute). Add the reserved chicken with its juices, the remaining peanut sauce, green onions, bean sprouts, and fresh cilantro. Cook and stir until everything is heated through, ensuring the flavors meld together beautifully. (1 minute). Keep warm.

Prepare the Noodles: While the vegetables are cooking, place the Pad Thai rice noodles in a large bowl and cover them with hot water. Let them soak until they are softened, but still slightly firm to the touch. (5 minutes). Drain the noodles thoroughly.
