Meanwhile, bring a large pot of lightly salted water to a rolling boil. Add the elbow macaroni and cook, stirring occasionally, until al dente (about 8 minutes). Drain into the colander with the red onion. Rinse under cold water to halt the cooking process and cool completely. (10 minutes)

In a large mixing bowl, whisk together the mayonnaise, pimentos, dill pickle relish, chow-chow (if using), Dijon mustard, Cajun seasoning, and kosher salt until well combined. Add the cooled macaroni, red onion, and diced celery to the bowl. Stir gently to coat evenly with the dressing. (5 minutes)

Carefully fold in the flaked tuna and chopped hard-boiled eggs, being mindful not to overmix. (2 minutes)

Feel free to adjust the amount of mayonnaise and seasonings to your preference.

To reduce the fat content, you can substitute some of the mayonnaise with plain Greek yogurt.
