In a large stock pot, combine water and quartered potatoes. Bring to a boil, then introduce the mashed tomatoes. Simmer for 10 minutes, then add pearl barley and rice. Continue cooking until the potatoes are tender (approximately 15-20 minutes).

Remove the boiled potatoes and mash them together with margarine until smooth. Set aside.

Add salt, pepper, diced carrots, and green beans to the simmering broth. Cook for 10 minutes, or until the carrots are tender.

Incorporate chopped onions, diced potatoes, celery, thawed peas, and broccoli florets. Cook for an additional 5 minutes, allowing the flavors to meld.

Stir in the mashed potato mixture, followed by the barley flakes. Simmer for a final 5 minutes to thicken the soup slightly. Serve hot and enjoy!

For a richer flavor, consider using vegetable broth instead of water.
Feel free to substitute your favorite vegetables based on seasonal availability and personal preference. Zucchini, corn, or spinach would all be excellent additions.
To boost the protein content, add cooked lentils or chickpeas.
If you prefer a smoother soup, you can use an immersion blender to partially blend the soup after it has finished cooking.
