Step

Heat olive oil in a large skillet over medium heat. Add chicken and cook, stirring occasionally, until browned on all sides. (5-7 minutes)

Add chopped onion and celery to the skillet and cook until slightly softened. (2-3 minutes)

Transfer the chicken mixture to a slow cooker. Stir in garlic powder, cumin, bay leaf, salt, black pepper, oregano, cayenne pepper, jalapeño peppers, green chilies, chicken stock, water, and drained Great Northern beans.

Cover and cook on Low for 8-10 hours, or on High for 4-5 hours.

Remove the bay leaf. Stir in sour cream and heavy cream until well combined. Serve hot.

For an extra layer of flavor, try adding a roasted poblano pepper, diced, to the slow cooker along with the other ingredients.
If you prefer a thicker chili, mash some of the Great Northern beans before adding them to the slow cooker.
Garnish with your favorite toppings, such as shredded cheese, chopped cilantro, or a dollop of sour cream.
