Step

In a large skillet over medium-high heat, cook the ground beef until browned and crumbly, approximately 5-10 minutes. Drain off any excess fat. Transfer the cooked beef to your slow cooker.

Add the chopped onion to the slow cooker, then sprinkle the taco seasoning evenly over the beef and onion mixture.

Pour in the white beans, red kidney beans, white kidney beans, ranch-style beans, pinto beans, black beans, hominy, and diced tomatoes with green chiles into the slow cooker. Stir well to combine all ingredients.

Cover the slow cooker and cook on Low heat for 4-5 hours, or until the flavors have melded together beautifully and the soup is heated through.

Feel free to experiment with different types of beans or add corn for extra sweetness. For a vegetarian option, omit the ground beef and add extra beans or vegetables.
Serve with your favorite toppings such as shredded cheese, sour cream, avocado, cilantro, and tortilla chips. You can also serve this soup in bread bowls for a fun and hearty meal.
This recipe can also be adapted for stovetop cooking. Simply combine all ingredients in a large pot and simmer over low heat for at least 30 minutes, or until the flavors have melded together.
