For a smokier flavor, use a smoked ham hock. Feel free to adjust the amount of potatoes to your liking. Russet potatoes can also be used. If you don't have fresh herbs, 1 teaspoon of dried herbs can be substituted for each tablespoon of fresh herbs. For a thicker soup, mash some of the potatoes before adding the half-and-half mixture. Leftovers can be stored in the refrigerator for up to 3 days.
