Generously season the inside and outside of the chicken with salt and freshly ground black pepper. (5 minutes)

Place the whole apple inside the chicken cavity. (2 minutes)

Place the chicken breast-side down in a slow cooker. Pour apple juice around the chicken. (3 minutes)

Cover the slow cooker and cook on Low setting until the chicken is no longer pink at the bone and the juices run clear. This should take approximately 4 to 6 hours. Use an instant-read thermometer inserted into the thickest part of the thigh, near but not touching the bone, to ensure it reaches 165 degrees F (74 degrees C). (4-6 hours)

Transfer the chicken to a cutting board. Cover it loosely with a doubled sheet of aluminum foil and let it rest in a warm place for 10 minutes before carving. This allows the juices to redistribute, resulting in a more tender and flavorful chicken. (10 minutes)

For enhanced flavor, consider adding a sprig of fresh rosemary or thyme to the chicken cavity along with the apple.
Browning the chicken in a skillet before placing it in the slow cooker can add depth of flavor and improve the skin's texture.
Serve the chicken with the pan juices from the slow cooker for added moisture and flavor. You can also thicken the juices with a cornstarch slurry for a simple gravy.
Adjust cooking time based on your slow cooker's performance. Check for doneness frequently during the last hour of cooking.
