In a large bowl, whisk together the flour, smoked paprika, sea salt, black pepper, and garlic powder. (2 minutes)

Add the beef strips to the bowl and toss to coat evenly with the flour mixture. Ensure each piece is well-covered. (3 minutes)

Heat the olive oil in a large skillet over medium-high heat. Sear the beef strips in batches, ensuring not to overcrowd the pan, until browned on all sides. This should take about 5 minutes per batch. Remove the seared beef and set aside. (15 minutes)

Add the diced onion to the skillet and sauté, scraping up any browned bits from the bottom, until softened and translucent, about 3-4 minutes. (4 minutes)

Transfer the seared beef, sautéed onions, and diced tomatoes and green chilies (undrained) to a slow cooker. Stir to combine all ingredients. (2 minutes)

Cover the slow cooker and cook on Low heat for 2-3 hours, or until the beef is very tender and easily shreds with a fork. (120-180 minutes)

Once cooked, shred the beef using two forks. Serve hot with your favorite accompaniments like rice, beans, tortillas, or your choice of toppings.

For an extra layer of flavor, add a pinch of cayenne pepper or a diced jalapeño to the slow cooker.
If you don't have round steak, you can substitute with sirloin or flank steak. Adjust cooking time as needed.
This carne picada is excellent served in tacos, burritos, quesadillas, or over nachos.
